Michelin Returns as Philippine Dining Faces Its Second Big Test

A year after Michelin Stars arrived in the Philippines, the country’s restaurant industry is about to find out what comes next.

The Michelin Guide will unveil its second Philippine restaurant selection on October 29, returning to Manila with inspectors again evaluating restaurants across Manila and its environs and Cebu.

The 2027 edition will be announced at the Manila Marriott Hotel at Newport World Resorts, the same venue that hosted the country’s inaugural ceremony last year.

But this time, the circumstances are different.

When Michelin entered the Philippines in 2025, there was no local benchmark. Every Star, Bib Gourmand and selection was a first.

The debut ultimately recognized 108 establishments: one restaurant received Two Michelin Stars, eight earned One Star, 25 were awarded Bib Gourmand distinctions and 74 entered the Michelin Selected list.

Helm, chef Josh Boutwood’s intimate tasting-menu restaurant, emerged with the country’s highest rating at Two Stars.

Asador Alfonso, Celera, Gallery by Chele, Hapag, Inatô, Kasa Palma, Linamnam and Toyo Eatery each received One Star.

Gallery by Chele also became the Philippines’ first Michelin Green Star restaurant, recognized for its approach to sustainability.

Those results created something the country’s restaurant industry did not have before: a Michelin baseline.

The October announcement will show how that landscape has moved after a full year under the guide.

Michelin says its anonymous inspectors have returned to familiar territory while extending their search farther into Manila’s environs. The guide’s Philippine coverage initially focused on Metro Manila and Cebu while exploring nearby destinations including Pampanga, Tagaytay and Cavite.

Michelin has not disclosed which restaurants will receive distinctions in the new edition.

What it has disclosed is what its inspectors say they are finding.

According to the guide, inspectors have observed greater consistency and technical confidence across the dining scene, along with deeper engagement with Philippine ingredients and culinary history.

That includes restaurants making deliberate use of ingredients such as calamansi, kamias and tamarind, as well as native spirits, tropical fruits, coffee, herbs and spices in food and beverage programs.

The guide has also pointed to contrasting strengths between its principal dining areas.

In Manila, inspectors see a restaurant culture increasingly driven by chefs, tasting menus and contemporary concepts. Cebu, meanwhile, continues to draw heavily from lechon, seafood, charcoal cooking and more communal traditions.

That distinction matters because Michelin does not require a particular cuisine, level of formality or restaurant format to qualify.

Its inspectors apply five principal criteria globally: quality of ingredients, mastery of cooking techniques, harmony of flavors, the personality expressed through the cuisine, and consistency across visits and the menu.

The system also reaches beyond expensive tasting menus.

Bib Gourmand recognizes restaurants Michelin considers to offer good food at good value, while Michelin Selected identifies establishments inspectors consider worthy of inclusion even without a Star or Bib Gourmand.

That breadth was already visible in the inaugural Philippine edition, where 25 restaurants earned Bib Gourmand recognition alongside the nine Starred restaurants.

For the 2027 selection, the larger question is therefore not simply whether the Philippines will gain more Stars.

Restaurants that entered the inaugural guide must continue performing under anonymous inspection, while previously unrecognized establishments have an opportunity to enter the selection. New Stars, Bib Gourmands and Michelin Selected restaurants may also alter the geographic and stylistic picture established by the first edition.

The timing carries another historical detail: the new Philippine selection is being unveiled during the centenary year of the Michelin Star, which was introduced in 1926.

Special awards recognizing individuals in the Philippine restaurant industry will also be presented alongside the restaurant distinctions.

The October 29 ceremony is invitation-only and begins at 5 p.m., but Michelin will livestream the announcement through its official channel.

Last year’s ceremony established where Philippine restaurants stood when Michelin first arrived.

The second edition begins answering a more revealing question: how the country’s dining scene evolves once the world’s most influential restaurant guide starts coming back.
